Long ago in Ireland, when the hills were said to whisper and the hearth was the heart of every home, Irish shortbread was born from butter and blessing. Unlike the famed Scottish version made firm and crisp for travel, the Irish made theirs soft and tender—rich with sweet Irish butter and the tradition of farm kitchens where recipes were guarded like treasure.
It was said that the fae taught the first bakers that bread shared in kindness brought good fortune, and so Irish shortbread was baked for holidays, weddings, and harvest festivals. Every family recipe changed a little with each generation—never in exact measure, always by feel and instinct.
